<item-todo-done>1 tbsp olive oil<item-todo-done><item-todo-done>3 tbsp fajita seasoning<item-todo-done><item-todo-done>3 tbsp mild hot sauce<item-todo-done><item-todo-done>2 eschallion shallots<item-todo-done><item-todo-done>2 clove garlic cloves<item-todo-done><item-todo-done> Pinch of salt<item-todo-done><item-todo-done>1 ½ red bell peppers<item-todo-done><item-todo-done>120g black beans<item-todo-done><item-todo-done>270g cooked rice<item-todo-done><item-todo-done>130g coriander<item-todo-done><item-todo-done>8 tortilla wraps<item-todo-done><item-todo-done> plant-based cheese<item-todo-done>

Before you start

Preheat the oven to 180℃ | Large pan | Grater | Baking dish

Cook the shallots

  • In a large pan, warm the oil and cook off the shallots until translucent, then add the garlic and salt and cook for a few more minutes

Cook the red pepper

  • Add the red pepper and cook until slightly softer, then add the fajita mix and hot sauce and stir in well

Add the black beans

  • Next, mix in the black beans and then the cooked rice
  • Add the coriander, stir well and take off the heat

For the wraps

  • Cut the tortilla wraps into quarters. In each quarter add about a teaspoon of the rice mix and some grated dairy-free cheese
  • Roll into a mini burrito and place them in a baking dish
  • Bake for 12 minutes

Time to serve

  • Take out of the oven and serve as nibbles or party food with guacamole and hot sauce
