The folks at Tesco's Vegmas Supper Club wanted us to turn our hand to a perfect plate of festive veggies. It was a pleasure to oblige. This is an easy, one pot side that can be made ahead of your Christmas dinner. It also looks the business on your Christmas dinner table. <item-todo-done>1kg red cabbage<item-todo-done><item-todo-done>2 crisp apples<item-todo-done><item-todo-done>1 large red onion<item-todo-done><item-todo-done>½ cinnamon stick<item-todo-done><item-todo-done>2 bay leaves<item-todo-done><item-todo-done>50ml balsamic vinegar<item-todo-done><item-todo-done>60g muscovado sugar<item-todo-done><item-todo-done>250ml water<item-todo-done><item-todo-done> Salt & pepper to taste<item-todo-done><item-todo-done>100g sultanas<item-todo-done>

Before you start

Large saucepan

Prepare the vegetables

  • Cut the red cabbage in half, cut out the core, shred the cabbage into small pieces with a sharp knife
  • Peel, core and cut the apples into matchsticks
  • Peel and finely slice the red onion

Combine the ingredients in a saucepan

  • Put all the ingredients into the saucepan and put the saucepan on the stove over a medium heat
  • Bring the contents of the saucepan to the boil, reduce the temperature to a very gentle simmer, put the lid on and allow to simmer for 45 minutes, checking every 15 minutes to check the cabbage isn’t drying out or catching

Taste and serve

  • Taste the cabbage
  • If it’s done the way you like it, remove from the heat and serve
