We used to love this stuff called "eggy bread", but it's not very vegan...so we decided to make a healthy vegan recipe using banana instead. It's a really simple technique but like lots of vegan innovation and BOSH! recipes, it's exciting and unique! Ingredients

For the french toast

<item-todo-done>1 ½ tsp plain flour<item-todo-done><item-todo-done>1 tsp maple syrup<item-todo-done><item-todo-done>1 ripe banana<item-todo-done><item-todo-done>4 slices of wholemeal bread<item-todo-done><item-todo-done> Pinch of salt<item-todo-done><item-todo-done>½ tsp cinnamon<item-todo-done><item-todo-done>½ tsp vanilla extract<item-todo-done><item-todo-done>250ml unsweetened almond milk<item-todo-done><item-todo-done>¼ tsp ground nutmeg<item-todo-done>


For the berry syrup

<item-todo-done>4 tbsp water<item-todo-done><item-todo-done>1 tbsp maple syrup<item-todo-done><item-todo-done>400g mixed frozen berries<item-todo-done>


To serve

<item-todo-done>4 tbsp plant-based yoghurt<item-todo-done><item-todo-done>1 tbsp firm coconut<item-todo-done><item-todo-done>1 ripe banana<item-todo-done><item-todo-done>12 fresh berries<item-todo-done>

Before you start

Lined baking tray l Small saucepan

First, make the french toast

  • Peel and mash the banana
  • Add the rest of the ingredients (except the bread!) and mix well to combine
  • Lay the bread slices in the mixture for 15 seconds or so, turning it so it soaks through
  • Place them on a lined baking tray and bake for 30 minutes until golden, turning halfway through

Now, make the berry syrup

  • Put the small saucepan over a medium heat
  • Add the berries, water and maple syrup and simmer for 15-20 minutes until all the liquid has reduced, stirring regularly
  • Halfway through cooking, gently mash the fruit with the back of a spoon

Time to serve!

  • Peel and slice the remaining banana
  • Plate up the toast, top with berry syrup, banana slices, yoghurt, fresh berries and coconut flakes
