Have some fun with this delicious smashed new potato recipe, served up with a delightful turmeric mayo. Chuck in a bunch of herbs and smash some taters for crispy, heavenly goodness. No need to be precious with this one. What's not to like?

For the potatoes

<item-todo-done>2 tsp smoked paprika<item-todo-done><item-todo-done>1 tsp dried rosemary<item-todo-done><item-todo-done>1 tsp dried thyme<item-todo-done><item-todo-done>1kg new potatoes<item-todo-done><item-todo-done>1 Pinch of Salt & pepper<item-todo-done><item-todo-done>3 spring onions<item-todo-done>


For the dip

<item-todo-done>1 tsp chilli powder<item-todo-done><item-todo-done>100g plant-based mayonnaise<item-todo-done><item-todo-done>1 tsp turmeric<item-todo-done><item-todo-done>1 lime<item-todo-done><item-todo-done> salt to taste<item-todo-done>


To serve

<item-todo-done>1 pinch of chilli flakes<item-todo-done><item-todo-done> sea salt<item-todo-done>

Before you start

Preheat the oven to 220℃ fan | Pastry brush l Baking tray

Roast the potatoes

  • Place the potatoes into a large baking tray and cover with the paprika, rosemary, thyme and a good pinch of sea salt
  • Mix well so all of the potatoes are coated in the spices before drizzling with a good amount of olive oil
  • Mix again and cook for 25 minutes

Smash the potatoes

  • After 25 minutes, crush the potatoes using a fork and place back in the oven for 10 more minutes to crisp up

While the potatoes are cooking, make the dip

  • Place the mayo, turmeric, chilli powder and lime juice in a bowl and mix until well combined
  • Taste and season with salt and pepper

Time to serve

  • Finely slice the spring onions
  • Place the cooked smashed potatoes onto a serving plate and top with a good sprinkle of sliced spring onions, sea salt flakes and chilli flakes
  • Drizzle the dip over the potatoes or serve on the side
