Seriously the best. Our friends from Big V London came into our studio the other day and showed us how to make this incredible plant-based burger recipe. They were so good we haven’t stopped thinking about them since. Make sure you give it a try! If you are plant-based or not- everyone loves some comfort food and this incredible veggie burger recipe will have you addicted. Trust us!

For the mushroom burgers

<item-todo-done>1 ½ tbsp tomato purée<item-todo-done><item-todo-done>1 ½ tbsp red miso paste<item-todo-done><item-todo-done>240g mushrooms<item-todo-done><item-todo-done>200g cooked pearl barley<item-todo-done><item-todo-done>1 large red onion<item-todo-done><item-todo-done>40g fresh parsley - chopped<item-todo-done><item-todo-done>240g vital wheat gluten<item-todo-done><item-todo-done> slices of plant-based cheese<item-todo-done>


To garnish

<item-todo-done> plant-based burger sauce - you can mix plant-based mayo with ketchup<item-todo-done><item-todo-done> burger relish<item-todo-done><item-todo-done> pickles<item-todo-done><item-todo-done> red onion - sliced<item-todo-done><item-todo-done> salad<item-todo-done><item-todo-done> burger buns<item-todo-done>

Before you start

Preheat oven to 200°C | Food processor | Baking tray

Make the mushroom patties

  • Whizz up the mushrooms in a food processor until they’re a fine mince
  • You may need to do it in stages so they blend evenly
  • Mix the mushroom mince with the rest of the ingredients, then mould into a burger shape and place on a baking tray
  • Bake at 200℃ for 20 minutes

Assemble your burger and serve!

  • Once out of the oven, put a slice of dairy free cheese on each burger
  • Grill for 2 minutes if you want it to go melty
  • Assemble burger in a bun with all the garnishes you want
