15 minute Hoi Sin Aubergine

Talk about speedy meal ideas, This hoisin aubergine is so quick- a 15 minute meal, and easy to make, as well as being delicious, healthy, and perfect for lunch the next day! A great recipe to cook for friends... or keep all for yourself!
Ingredients
- 1 cup water
- 1 tbsp olive oil
- One large aubergine (cut into 1 inch cubes)
- 4 spring onions (finely sliced)
- ½ Bok choy (finely sliced)
- 3 tbsp hoisin sauce
- 1 red chilli (deseeded and finely sliced)
- Brown rice
- Mixed seeds
- Mixed veggies (blanched)
Method

Pour the water into a frying pan (with a lid), warm it up so it starts to bubble lightly

Put the aubergine cubes into the frying pan, put the lid on the pan

When the water has almost totally evaporated, pour the olive oil and the hoisin sauce into the pan and gently mix them together

Put the rice in the microwave and cook it according to the instructions on the pouch

Pour the bok choy, spring onions and red chilli into the frying pan and stir them with a wooden spoon so they mix with the aubergine cubes

Add a splash more water if the pan is drying out to gather up the flavour from the bottom of the pan

Take the pan off the heat and leave it to one side

8.
Split the rice between two tupperware boxes

9.
Transfer equal amounts of the hoisin vegetables to the tupperware boxes

10.
Sprinkle over the seeds and add the veg , let them cool down to room temperature and pop them in the fridge
