5 Minute Mocha Mug Cake


Gone are the days where you would need a million bowls in the kitchen or big occasion to enjoy a delicious chocolate cake. Discovering this easiest ever mug cake recipe is reason enough to celebrate - and it's absolutely perfect for a little solo pick-me-up to enjoy on the couch or in your PJs.
One mug, one (-ish) minute bake, one serving. Can't get much simpler than that!
Serves 1.
Before you start
Large microwavable mug
Ingredients
For the cake
- 3 ½ tbsp self-raising flour
- 3 tbsp caster sugar
- 1 tbsp cacao powder
- ½ tbsp espresso powder
- ¼ tsp baking powder
- 4 tbsp oat milk
- 2 tbsp vegetable oil
- 30g vegan dark chocolate (about 3 chunks)
To serve
- Vegan ice cream
Method

Make the cake | Place the flour, sugar, cacao powder, espresso powder and baking powder into a mug and mix well using a fork until there are no lumps | Add the oat milk and oil and mix again until the mixture comes together and becomes smooth | Place the chocolate pieces on top of the mixture and push into the centre using your finger or the fork so it sinks into the batter

Cook the cake | Place the mug in the microwave and cook for 1 ½ minutes, no longer otherwise it might spill over

Time to serve | Serve the mug cake with a dollop of vegan ice cream on top
