Skip the takeaway and say hello to your new favourite dinner! This is our Air Fried ‘Chicken’ - crispy, mega easy to make and (best of all) plant based. This “chicken” is made using beautiful oyster mushrooms, which have an incredible texture that makes them absolutely perfect for this dish.

Air fryer | 2 large mixing bowls

Ingredients

For the “chicken”

  • 500g oyster mushrooms
  • 200ml plant-based yoghurt
  • Spray oil

For the spice blend

  • 100g all-purpose flour
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp onion granules
  • 1 tsp black pepper
  • 1 tsp white pepper
  • 1 tsp salt
  • ½ tsp celery salt
  • ½ tsp ground ginger
  • ½ tsp thyme
  • ½ tsp oregano
  • ½ tsp mustard powder

To serve (optional)

  • Vegan mayonnaise
  • Ketchup
  • BBQ sauce
  • Frozen chips

Method

  1. 1.

    Make the batter up | In a mixing bowl, add the plant-based yoghurt and give it a little stir to loosen it up | In a separate bowl, mix together the spice blend ingredients

  2. 2.

    Batter the mushroom pieces | Place each oyster mushroom in the bowl of yoghurt and mix well until well coated | Remove from the bowl and place into the spice blend | Mix well until completely coated in the spices

  3. 3.

    Air fry the mushrooms | Spray the air fryer basket with oil and preheat | Add the battered mushrooms, spray with some more oil and cook, shaking the basket regularly until all sides are golden brown and delicious | Once cooked, remove from the air fryer

  4. 4.

    Time to serve | Sprinkle with salt and serve hot with chips and your preferred dipping sauces
