Chinese Takeaway Waffle Fries

These loaded Chinese takeaway waffle fries make the most out of any leftovers and are the perfect sharer for when you have guests over. Packed full of punch and vegan crispy chilli beef, you'll be digging into these time and time again!
Before you start
Preheat oven to 200*C | Frying pan | Baking tray

- 1 large bag waffle fries
- 1 portion crispy chilli beef
- Shredded cucumber
- Shredded spring onion
For the sauce
- Lime
- Vegan Mayo
- Sriracha

- Hoisin sauce
- Crispy onions

Cook the waffle fries | Spread the waffle fries out on the baking tray, put the tray in the oven and bake according to packet instructions (approx 20 mins)
Prepare the ingredients | Shred your cucumber and spring onion | Take your portion of chilli vegan beef and chop into small chunks, about 1/2cm thick. Heat in a pan or in the microwave.
Make the sauce | Mix 1 lime with some vegan mayo and sriracha, adjusting to taste, to make your mayo.
Prepare the loaded fries | After the fries are cooked, add them to a frying pan, with a generous splash of oil and the leftover crispy chilli beef. Fry for 2-3 minutes, stirring regularly, to warm up the beef strips, further cook the fries, and mix the flavours.
Finish the loaded fries and serve | Sprinkle with cucumber, spring onion, crispy onions, lime mayo, hoi sin sauce and sriracha. Eat with chopsticks. BOSH!
