These loaded Chinese takeaway waffle fries are a fun and versatile way to make the most of any leftovers, and jazz up some already punchy flavours with a sriracha lime mayo.

We love them with our crispy chilli beef, but they would work great with any other Chinese ‘fakeaway’ dishes such as crispy chilli tofu, Chinese lemon “chicken”, General Tso’s tofu or vegan crispy duck pancake filling. Just use what you’ve got and adjust the remaining toppings as you like!

A perfect sharing snack with friends over drinks, and if you plan ahead you can simply make a double batch of your chosen topping fakeaway dish for dinner to get two dishes out of one meal.

Any leftover sriracha lime mayo will keep for a few days in the fridge and goes great as a dip for any other fried snacks or in burgers or tacos.

Before you start

Preheat oven to 200˚C (or per fries packaging instructions) | Frying pan | Baking tray | Box grater (optional)

Ingredients

  • 1 large bag waffle fries (500-700g)

For the toppings

  • 1/2 cucumber
  • Small bunch spring onion
  • 1 portion BOSH! crispy chilli beef (or other Chinese fakeaway dish of choice)

For the sriracha lime mayo

  • 1 lime
  • 150ml vegan mayo
  • 2 tbsp Sriracha
  • Pinch salt

To serve

  • Drizzle hoisin sauce
  • Handful crispy onions
  • Large pinch sesame seeds (white, black or a mix of both!)

Method

  1. 1.

    Cook the waffle fries | Spread the waffle fries out on the baking tray and bake according to packet instructions (approx 20 mins)

    Prepare the ingredients | Slice the cucumber into thin matchsticks, or cut roughly into thirds and shred by grating over a box grater (stopping before the seeds) | If grating the cucumber, transfer to a sieve over a bowl and leave to strain out any excess liquid until ready to serve | Thinly slice the spring onion | Chop your portion of crispy chilli beef (or equivalent main) into small chunks, about 1/2cm thick

    Make the sauce | Juice the lime and mix with the vegan mayo, sriracha and salt, adjusting to taste

  4. 4.

    Assemble the loaded fries | Reheat the chilli beef chunks briefly in a pan or microwave | Assemble the fries onto a plate (briefly reheating in a pan if necessary) and top with the chilli beef, cucumber, spring onion, crispy onions, sriracha lime mayo, hoi sin sauce and sesame seeds | Eat with chopsticks!
