Banana Oat Pancake | Veganuary Week 3
Love pancakes? This recipe is for you! We've used banana and oats as the base of these pancakes making them super healthy and delicious. We've topped ours with coconut yoghurt and mixed berries but you can do whatever you like! You could add other fruits, maple syrup or even melted chocolate if you're wanting a bit of a treat. 🤤
- 50g oats
- 25g ground almonds
- 1 teaspoon of baking powder
- 1 large ripe bananas
- ½ teaspoon of vanilla extract
- Pinch of salt
- 75 ml unsweetened fortified plant based milk
- ½ tbsp of olive oil (plus more for cooking)
- 1 tbsp of plant based yoghurt (to serve)
- 60g of frozen or fresh mixed berries (to serve)
You will need..
Blender | Whisk | Mixing bowl | Medium, non-stick small high-sided frying pan
Place all of the ingredients in a blender or food processor and blitz until a smooth thick batter is formed.
Add a teaspoon of oil in a small non stick frying pan and place over a medium / high heat | Add half a cup of batter to the hot pan and cook for several minutes until air bubbles can be seen on top of the pancakes | Flip the pancake over using a spatula and cook for a further 2 minutes.
Serve immediately with plant based yoghurt and fresh fruit
