This is our protein packed, black bean dip! It makes a great snack to have with anything - crackers or veggies. 😊 This is a super simple dip! All you need to do is add your black beans and other ingredients to a blender and whizz away. Feel free to also add any other ingredients and flavours you like! If you're following along with our meal plan, then this should last you for 5 days of small snacks. If you want more you can double the batch. 😊

  • 400g black beans (tinned)
  • 4 sun dried tomatoes
  • ½ lemon
  • ½ lemon
  • 2 tbsp oil from sun dried tomato jar
  • 2 tbsp water
  • ½ tsp chilli flakes
  • Salt and pepper to taste
  • 10g parsley leaves

To serve

  • Whole wheat crackers
  • Sliced veggies

    You will need...

    Food processor

    Drain and rinse the black beans | Juice the lemon

  3. 3.

    Place the black beans, sun dried tomatoes, lemon juice, oil, water, chilli flakes in the blender and blitz into a textured paste | Taste, season to perfection and portion the dip into 5 small sealable containers | Eat one portion every day as a snack with 2 of the whole wheat crackers or crudités
