Bolognese Burgers

To put it simply, this burger is a-bolognese-ing. It's the perfect way to bring your leftover bolognese back to life, and who can say no to a juicy burger? Not us!


Before you start

100g leftover bolognese sauce | Frying pan with a lid | Saucepan

Serves 2


For the burgers

  • 2 plant-based burger patties
  • 100g leftover bolognese (see Before You Start for recipe)
  • 20g grated plant-based mozzarella
  • 10g rocket
  • 2 plant-based brioche buns
  • Olive oil for drizzling
  • 2 tbsp plant-based mayo
  • 1 tbsp plant-based pesto
  • Salt and pepper to taste


  1. 1.

    Prepare the brioche | Halve the brioche buns and drizzle the cut side with olive oil | Warm the frying pan over medium heat | When hot, place the brioche in the pan cut side down and toast for 2-3 minutes until golden and crispy | Set the buns to one side

    Prepare the pesto mayo | Add the pesto and mayo to a bowl and stir to combine | Taste and season with salt and pepper

    Prepare the bolognese | Add the bolognese to a saucepan and warm up over medium heat

  4. 4.

    Cook the burgers | Add a little olive oil to the pan and warm over medium heat | Add the burger patties and cook according to the pack instructions (approx 3 mins on each side) | When the burgers are 1 minute away from being completely cooked, top both patties with the vegan mozzarella cheese, add a splash of water in the pan, put the lid on and let the cheese melt

    Build the burgers | Spread the pesto mayo over the brioche buns, add the rocket, top with the burgers, spoon over the bolognese, close the burgers and serve immediately
