Bonita's Apple Bombs

Maybe you had an idea to make a nice vegan apple pie recipe and then you stumbled across this one! This is the apple pie's little naughty nephew. A great dairy free pudding for all of the family!
Our friend Bonita came in to the BOSH! kitchen to make these Apple Bombs. They took a fair bit of time but trust us, they were worth every minute.
For the Doughnuts
- 3 cups warm water
- 2 tbsp caster sugar (for yeast mix)
- 1 tbsp dried yeast
- 4 cups plain flour
- 1/2 cup caster sugar
- 1 tsp baking powder
- 1 tsp nutmeg
- 1 tsp cinnamon
- 4 tbsp dairy free butter
For the Apple Filling
- 4 cooking apples
- 2 tbsp caster sugar
- juice of 1/2 lemon
For the Salted Caramel Sauce
- 1 cup soft brown sugar
- 1 can coconut milk
- 1/2 tsp salt
Mix the warm water, 2 tbsp sugar and yeast in a bowl. Cover in cling film and leave for 45 minutes to rise.
In a separate bowl, mix the flour, sugar, baking powder, cinnamon and nutmeg. Then into this, add the melted dairy free butter and the yeast mix you made earlier. Mix well, cover, and leave for another 45 minutes.
Roll the mixture into roughly 17 balls. Roll in a small amount of flour and leave on a plate to raise slightly more for a further 20 minutes.
Individually deep fry each doughnut in vegetable oil until golden. Leave to cool slightly.
For the stewed apple, put the apples, caster sugar and lemon juice in a pan, cover and stew on a low heat for about 15 minutes until soft.
Put the apple in a piping bag and squeeze into each doughnut.
For the salted caramel sauce, mix the sugar, coconut milk and salt in a pan, and cook until it’s combined into a sauce.
Pour the sauce over the doughnuts and serve. BOSH!
