This is one of our fantastic recipes that we created for Tesco's #Vegmas Supper Club! This is an easy, one pot side that can be made ahead of your Christmas dinner. It looks beautiful on your plate as well!



  • 1kg red cabbage
  • 2 crisp apples
  • 1 large red onion
  • 100g sultanas
  • ½ cinnamon stick
  • 2 bay leaves
  • 50ml balsamic vinegar
  • 60g muscovado sugar
  • 250ml water
  • Salt and pepper to taste

    You will need...

    Large saucepan

    Cut the red cabbage in half, cut out the core, shred the cabbage into small pieces with a sharp knife | Peel, core and cut the apples into matchsticks | Peel and finely slice the red onion

  3. 3.

    Put all the ingredients into the saucepan and put the saucepan on the stove over a medium heat | Bring the contents of the saucepan to the boil, reduce the temperature to a very gentle simmer, put the lid on and allow to simmer for 45 minutes, checking every 15 minutes to check the cabbage isn’t drying out or catching | Taste the cabbage, if it’s at your desired doneness, remove from the heat and serve
