The folks at Tesco's Vegmas Supper Club wanted us to turn our hand to a perfect plate of festive veggies. It was a pleasure to oblige. This is an easy, one pot side that can be made ahead of your Christmas dinner. It also looks the business on your Christmas dinner table.

If you're looking for vegan side dishes for your Christmas dinner, you HAVE to add these to your dinner table. A delicious veggie roast side that everyone will love.



  • 1kg red cabbage
  • 2 crisp apples
  • 1 large red onion
  • 100g sultanas
  • ½ cinnamon stick
  • 2 bay leaves
  • 50ml balsamic vinegar
  • 60g muscovado sugar
  • 250ml water
  • Salt and pepper to taste


  • Large saucepan


  1. 1.

    Cut the red cabbage in half, cut out the core, shred the cabbage into small pieces with a sharp knife.

    Peel, core and cut the apples into matchsticks. Peel and finely slice the red onion.

    Put all the ingredients into the saucepan and put the saucepan on the stove over a medium heat. Bring the contents of the saucepan to the boil, reduce the temperature to a very gentle simmer, put the lid on and allow to simmer for 45 minutes, checking every 15 minutes to check the cabbage isn’t drying out or catching.

    Taste the cabbage. If it’s done the way you like it, remove from the heat and serve.
