This dish is a weekend favourite, it doesn’t take up too much time and you can easily double the recipe to make more for friends and family. It’s a great treat, whether you’ve been out the night before or you just fancy something different!
Grab some veggie sausages and dairy free cheese from your preferred supermarket and get started! Assemble your sandwich, dip it in the french toast mix and fry away. The key to this recipe is to cook it on a low heat until both sides are golden and the cheese has melted. Just make sure you don’t burn it!

Ingredients
For the burger sauce
- 3 tablespoons vegan mayonnaise
- 2 tsp yellow mustard
- 1 tsp garlic powder
- 1/2 tsp onion salt
- 1/2 tsp paprika
- 1 tsp white wine vinegar
- Add all to a jar and mix to combine
For the burger patty
- 3 veggie sausages
- 1 tsp garlic powder
- 1 tsp pepper
- 1 tsp salt
For the French toast batter
- 1/2 cup almond milk
- 1 tsp black pepper
- 1 tsp sea salt
- 1/2 tsp garlic powder
- 1 tbsp nutritional yeast
- 1 tbsp flour
To compile the toast
- 3 veggie sausages
- 1 tbsp rapeseed oil
- Two slices of white bread
- 4 slices vegan cheese
- 2 gherkins sliced
- 2 tbsp sauce
- 1 tbsp red onion chopped finely
- 1 tsp rapeseed oil
Method

Make the burger sauce and set aside.

Microwave the sausages then break up in a bowl. Add the garlic powder, salt and pepper then mash together.

Take the mix out the bowl and put it on a chopping board. Mould the sausage mix into a rectangle (so that will fit within the crusts of bread).

Add the oil and the sausage burger to a medium frying pan and fry on each side for a couple of minutes on a medium heat. Set aside.

Mix the French toast batter together in a wide based bowl.

Layer the following; 1 slice bread, 2 slices of cheese, vegan burger, burger sauce, gherkins and onion, top with two more slices of cheese and another slice of bread.

Dip into the batter on one side then flip over.

Add the oil to a frying pan and let it heat.

Add the French toast and fry for 2-3 minutes on a low heat. Be careful not to burn. Flip and fry for a further 2-3 minutes until golden brown and cheese has melted.
