Looking for a sweet vegan treats recipe? What a a treat you are in for with our dairy free cakes of heaven.
Such a super easy vegan cake recipe!
We teamed up with the lovely Sasha from the Sasha Diaries to make these delicious Lamingtons.
For those of you who haven’t heard of Lamingtons before, they’re tasty Australian treats that go perfectly with a cup of tea. Here’s how you can make them at home..
Ingredients
Sponge
- 1 can chickpea water
- 3/4 cup sugar
- 1 tsp vanilla extract
- 2 tsp lemon juice
- 1.5 cups all purpose flour
- 1 tsp baking powder
- 1/4 tsp baking powder
Icing
- 2 cups powdered sugar
- 1/2 cup cocoa powder
- 1 cup dark chocolate (melted)
- 3 tbsp dairy free butter
- 1/2 cup hot water
- 1 cup strawberry or raspberry jam
- Desiccated Coconut
Method

Drain the water out of a can of chickpeas into a bowl & whisk it until it starts to thicken like egg white - this will take a while, be patient - it’s worth it!

Add the sugar & whisk that in too so it’s not gritty at all.

Add the vanilla extract, lemon juice & whizz that in too.

Add the flour, baking powder & baking soda & fold it all together.

Pour the mixture into 2 loaf tins that have been oiled & lined with baking paper.

Put the tins in the oven & bake the cakes for 35 minutes at 180℃ (356℉)

Whilst the cakes are baking put the powdered sugar, cocoa powder, dark chocolate, dairy free butter & hot water in a large pyrex bowl, mix it all together & put it to one side.

Take the laminations out of the oven & let them cool.

Spread the jam on one side of one of the cakes & put the other cake on top of it - like a jam sandwich.

10.
Cut the “sandwich” into 8 pieces.

11.
Dip each piece into the chocolate sauce so they’re completely covered.

Dip the chocolate covered pieces in desiccated coconut & put them to one side to cool a bit.

Enjoy as a treat with a cup of tea. BOSH!
