A few of you guys have sent us messages recently saying you want us to cook a few more super healthy recipes, so we've made you this super lush casserole!



  • 1 tbsp vegetable oil
  • 1 red onion
  • 3 cloves garlic
  • 1.5 tbsp dried thyme
  • 2 tsp cumin
  • 1 tbsp paprika
  • 1 yellow pepper
  • 2 carrots
  • 1 red pepper
  • 2 sticks of celery
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp tomato puree
  • 1 courgette
  • 1 sprig fresh thyme
  • 2 cans of tomatoes
  • 2 cups cooked Puy lentils


  1. 1.

    Warm the oil in a large pan and add the onion, cooking until soft.

    Add the garlic, dried thyme, cumin and paprika, stir and cook for a few more minutes.

  3. 3.

    Add both the peppers, carrot and celery, and stir until they begin to soften, before mixing in the salt, pepper and tomato puree.

  4. 4.

    Mix everything in then add the courgette, a sprig of fresh thyme and 2 tins of tomatoes.

  5. 5.

    Stir and then cover and leave on a low heat for about 10 minutes so all the flavours are well combined.

  6. 6.

    Add the lentils, stir together, and serve. BOSH!
