Creamy Pesto Pasta Bake
- Penne pasta (enough for 6 people)
- 1 red onion (finely chopped & fried)
- 1 cup cashews (soaked)
- Pinch of salt
- Juice of 2 lemons
- 1/3 cup nutritional yeast
- 1 cup pine nuts
- 1/2 cup soy milk
- Small bunch basil
- Sprouting Broccoli
Pour cooked pasta and cooked red onion into a baking dish.
Put all pasta sauce ingredients in a blender and whizz them into a liquid.
Pour pasta sauce over pasta and onion and stir around.
Cover top with breadcrumbs.
Bake for 25 minutes at 180℃ (356℉)
Remove from oven and serve immediately. BOSH!
