The noodles that all other noodles want to be….Our very own Ben from @bensvegankitchen has mastered the art of the speedy mid-week dinner with these noodles - bursting with flavour and ready in just 10 minutes. Winner! Give ’em a go and let us know what you think.


Before you start

Wok | Kettle boiled | Saucepan



  • 3 shallots
  • 2 spring onions
  • 3 cloves garlic
  • Chilli garlic sauce
  • 2 limes
  • 1 tbsp Brown sugar
  • 3 tbps Soy sauce
  • Chilli flakes
  • Sesame seeds
  • Udon noodles (1 pack per person)
  • Sesame oil
  • Vegetable Oil
  • Salt

    Prepare the ingredients | Chop your shallots, spring onions and garlic | Halve your lime

    Fry your shallots | Into the wok, add your vegetable oil and turn up the heat to medium | When the oil is hot, throw in your chopped shallots and a generous pinch of salt | Fry until crispy | Pour out onto a paper towel lined plate and set aside

    Make the noodles | In a wok, heat your sesame oil on a high heat. Throw in the whites of the spring onion and your garlic | Fry for a few minutes | Add a spoonful of your chilli garlic sauce, your brown sugar, pinch of chilli flakes and the juice from one lime | Whilst that’s cooking, pop your udon noodles into the boiling water until they separate then add to the wok | Throw in half the crispy shallots and mix

    Time to serve | Put your cooked noodles into a bowl and sprinkle over the greens from the spring onions, sesame seeds and another big squeeze of lime | Serve and enjoy
