This is our Easy Cheezy Traybake, a super delicious, super wholesome vegan recipe packed with vitamins and minerals. It's a great way to use up leftover vegetables in your fridge, and the great thing about this dish is that it's so versatile. You can mix it into pasta, serve it with your favourite plant-based protein, or just eat it as it is.

The star of this recipe is the cheesy pesto dressing, made using BOSH! Ultimate Cheeze Sauce, our new vegan cheese sauce that's available to buy at Asda right now! It makes this dressing creamy, cheesy and flavourful, and we can't wait for you to give it a try.


Before you start

Baking tray | Baking paper | Saucepan | Preheat the oven to 200°C


For the veggies

  • 1 butternut squash
  • 1 banana shallot
  • 1 cauliflower, with the leaves
  • 4 large garlic cloves
  • 2 leeks
  • 3 carrots
  • 1 bunch of fresh basil
  • 400g butter beans
  • 1 lemon

For the cheezy dressing

  • 1 jar BOSH! Ultimate Cheeze Sauce
  • ½ jar plant-based green pesto


  1. 1.

    Prepare your vegetables | Peel and cut the squash and carrot into wedges | Tip them onto a baking tray covered with baking paper | Peel the garlic and banana shallot and roughly chop them | Add sliced leek, cauliflower florets and the cauliflower leaves to the baking tray | Cover generously with olive oil and salt

    Cook your vegetables | Roast your vegetables in the oven for 25 minutes | Remove the tray from the oven and mix the drained butter beans and lemon zest through the veg | Cook for 5 more minutes

    Create your cheezy dressing | Heat the BOSH! Ultimate Cheeze Sauce in a small saucepan | Swirl in a dollop of pesto and set aside

  4. 4.

    Time to serve | Take your vegetables out the oven and spoon over the cheezy dressing | Finish with fresh torn basil and serve warm
