We’re sharing this epic Plant-based Chilli Beef with a spicy kick, created by the incredibly talented Ebenezer. It's spicy, crunchy and full of flavour. Plus, you can cook it in under 15 mins! What's not to love??

For the beef

  • 250g plant-based beef mince
  • 2 tbsp vegetable oil
  • 1 plant-based stock cube
  • 1 thumb-sized piece of ginger
  • 4 garlic cloves
  • 5 spring onions
  • 1 tbsp dried chilli flakes
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 fresh chilli

To serve

  • 1 packet of microwave rice
  • Coriander

Method

  1. 1.

    Preheat the wok with a drizzle of oil

  2. 2.

    Add the plant-based mince | Break it up and fry until brown and crispy

  3. 3.

    Flavour the beef | Add in your crumbled stock cube, ginger, garlic, chopped spring onion, sliced chilli, soy sauce, sesame oil and stir well. Fry for an additional 2 minutes

  4. 4.

    Serve with rice | Prepare your rice according to the instructions on the packet | Serve immediately with coriander
