When a cheeseburger meets a grilled cheese you just know you're on to a winner. This sandwich is a game changer and the ultimate vegan treat!

Before you start

Preheat oven according to packet instructions | Baking tray lined with baking paper | Grater


Ingredients

For the grilled cheese burger

  • 4 vegan burger patties
  • 8 slices sourdough bread
  • 100g smoked vegan cheese
  • 2 medium gherkins
  • 1 tomato
  • 1 baby gem lettuce
  • Vegan butter

For the sauce

  • 4 tbsp vegan mayo
  • 2 tbsp tomato ketchup
  • 1 tbsp american mustard
  • 2 tsp brine from jar of gherkins
  • 1 tsp sugar
  • ½ tsp ground black pepper
  • ¼ tsp salt

Method

    Cook the burgers | Place the burgers on a baking tray and cook according to package instructions (usually 20 mins)

    Prepare the burger sauce | Place all the burger sauce ingredients in a small bowl and stir to combine

    Prepare the remaining ingredients | Butter the sourdough slices | Grate the cheese with the fine side of the box grater | Slice the gherkins | Remove the white core of the lettuce and shred | Slice the tomato

    Prepare the burgers | Take the burgers out of the oven, lay them on a chopping board and cut them into 1cm slices

    Build the Grilled Cheese Burgers | Put the frying pan on the stove over medium heat | Place 4 slices of sourdough in the pan, buttered side down | Sprinkle the grated cheese over the sourdough | Lay the gherkins and sliced tomatoes on top of the cheese | Sprinkle the lettuce over the gherkins and tomatoes | Place the burger slices on top of the lettuce | Drizzle the sauce over the burger slices, sprinkle over a little extra cheese | Top each burger with the remaining slices of sourdough, making sure the buttered sides are up | Press down on the Grilled Cheese Burgers with the back of a spatula until golden and crispy | Flip the burgers over with a spatula and fry until golden

    Time to serve | Transfer the Grilled Cheese Burgers to a chopping board, cut in half with a sharp knife, transfer to plates and serve immediately
