Healthy(ish) Breakfast Muffin


Wondering what to cook thats vegan for breakfast?
We have plenty of delicious plant based breakfast ideas and this must be one of the healthiest breakfasts out of them all.
Our friend Ellie from Kind State of Mind popped into our studio and showed us how to make these amazing breakfast muffins. They are very more-ish and have fast become an absolute staple in the BOSH! household. Try them for yourself and see.
A delicious and simple breakfast idea.
Ingredients
For the tofu 'egg'
- 1 block firm tofu
- 1 tbsp truffle oil
- 1 tbsp lemon juice
- 1 tsp turmeric
- Pinch salt
- Pinch black pepper
Extras
- 3 veggie sausages (microwaved for 1 minute)
- 2 slices dairy-free cheese
- English muffins
- Tomato ketchup
Equipment
- Frying pan
- Mixing bowl
Method

Press the tofu until all excess moisture is out of it, then split in half and shape into circles.

Mix the rest of the ingredients for the tofu ‘egg’ to form a yellow sauce, then soak the tofu circles in it.

Crumble the veggie sausages and press into two circular moulds to form patties.

Fry both the tofu and sausage patties in a pan, flip them and add the dairy-free cheese slices so they can melt slightly.

Assemble them on the English muffins and add your favourite sauce.
