Khao Soi Noodles

We fancied something tasty and healthy for dinner and these Khao Soi style noodles were perfect. They’re really delicious and loaded with veggies, give them a go!



  • Coconut oil
  • 1 tin coconut milk
  • 1 litre vegetable stock
  • 1 cup shitakke mushrooms
  • 1 cup green beans
  • 1 cup mange tout
  • 1 cup purple sprouting broccoli
  • 1 cup cooked butternut squash
  • 3 chopped scallions
  • 2 tbsp soy sauce
  • 1 tbsp coconut sugar
  • 2 sheets rice noodles
  • Sesame seeds to garnish


  • 1 tsp ground coriander
  • 1 tsp chilli Powder
  • 2 tsp turmeric
  • 2 stalks of lemongrass, chopped
  • 5 cloves garlic
  • 5 cm ginger
  • 2 shallots
  • 4 chillies
  • Handful cilantro


  1. 1.

    Blend all the ingredients for the paste together so it’s well mixed, then pour it into a pan with the hot coconut oil.

    Mix in the coconut milk until it’s a thick soupy consistency.

  3. 3.

    Add the vegetable stock and all the veggies with the soy sauce and coconut sugar. Stir well and cook until the vegetables have started to soften.

    Add the rice noodles and stir for about another 5 minutes until the noodles are cooked.

    Serve and garnish with sesame seeds. BOSH!
