The guys from Lemonaid came into our studio with a bottle of their passionfruit lemonade, so naturally we made a cake with it. If you're looking for a vegan cake to bake today would like something with a little more fruity...we could not recommend anything better! It really is gooey and delicious and definitely worth a try! For the cake

<item-todo-done>1 tsp bicarbonate of soda<item-todo-done><item-todo-done>180g self raising flour<item-todo-done><item-todo-done>240ml lemonade - we used Lemonaid<item-todo-done><item-todo-done>120g caster sugar<item-todo-done><item-todo-done>80ml vegetable oil<item-todo-done><item-todo-done>½ tsp salt<item-todo-done><item-todo-done>½ tsp vanilla essence<item-todo-done>


For the icing

<item-todo-done>1 tsp vanilla essence<item-todo-done><item-todo-done>120g icing sugar<item-todo-done><item-todo-done>60g plant-based butter<item-todo-done>

Before you start

Preheat oven to 180°C | Baking Tray | Food processor

Blend the ingredients

  • Put all the cake ingredients in a food processor and blend until well mixed
  • We used Passionfruit Lemonaid, but you can use any lemonade you fancy

Time to bake

  • Pour the mixture into a baking tray and bake for 40 minutes

Make the icing

  • Meanwhile, make the icing by blending the ingredients together

Time to serve

  • Once the cake is cooled, ice it and serve. BOSH!
