Lushy Lemony Grains

Lovely, Lushy, Lemony grains, the best way to use up any leftover veg in your fridge! This has a knock-your-socks off cheesy, nutty, pesto flavour that makes all these veggies sing together. This meal is packed with vitamins and over half of your 5 a day, so don't walk... Run to the kitchen!


Before you start

High sided frying pan | Box grater

Serves 2


For the grains

  • 2 tbsp olive oil
  • 2 small courgettes
  • 10 brussels sprouts
  • 8 large pitted green olives
  • 1 tbsp capers with the brine
  • 1 large clove garlic
  • Pinch chilli flakes
  • 10 yellow cherry tomatoes
  • 2 tbsp vegan pesto
  • 1 lemon
  • 3 cavolo nero leaves
  • 1 250g bag Italian style grains
  • 1 tbsp nooch
  • Salt and pepper to taste

To serve

  • Mixed seeds
  • Nooch
  • Hummus


  1. 1.

    Prepare the ingredients | Trim the courgettes and cut into 2cm chunks | Trim and halve the brussels sprouts | Cut the olives into thick slices | Halve the cherry tomatoes | Rip the spine out of the cavolo nero and finely slice | Peel and grate the garlic | Zest the lemon

  2. 2.

    Cook the dish | Warm olive oil in the frying pan over a medium-high heat | Add the courgettes and brussels sprouts to the pan and fry for 2 minutes stirring occasionally | Add the olives and capers and stir for 2 minutes | Add the garlic and chilli flakes and stir for 1 minute | Add the tomatoes and stir gently for 2 minutes | Add the pesto and lemon and stir to combine | Add the cavolo nero and fold until slightly wilted | Add the grains and stir until warmed through | Add the nooch and a little salt and pepper and fold to combine

  3. 3.

    Time to serve | Spoon the lovely Lushy Lemony Grains into serving bowls, sprinkle with seeds and nooch, add a dollop of hummus and serve immediately
