Peanut Butter Cup Cupcakes

Peanut butter and chocolate is a winning combination - especially in the form of a cake! These cupcakes are the perfect fix for your sweet tooth.

Cupcakes

  • 1.5 cups plain flour
  • 1 cup caster sugar
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • 1 tsp white wine vinegar
  • 1 cup water
  • 1/3 cup vegetable oil

Icing

  • 1 cup icing sugar
  • 1 cup peanut butter
  • 2 tbsp almond milk

Decoration

  • Dark chocolate
  • Mixed nuts

Method

  1. 1.

    Combine all the cake ingredients in a food processor and blend until smooth.

  2. 2.

    Pour mixture into cupcake cases and bake at 180℃ (356℉) for 25 minutes.

  3. 3.

    For the icing, mix the peanut butter, almond milk and icing sugar together and scoop into a piping bag. Pipe onto the cooled cupcakes.

  4. 4.

    Decorate with dark chocolate shavings and chopped mixed nuts.

  5. 5.

    Try not to eat all at once. BOSH!
