Perfect Porridge | Veganuary Week 1
This is a perfect porridge recipe! It's tastes delicious and toppings are a great source of vitamins and nutrients whilst being super tasty. 😊
This porridge takes no time at all and is a perfect kick start to your day. We've topped ours with loads of healthy ingredients to take this to the next level.
Porridge provides lots of fibre, slow releasing carbs and is rich in minerals including copper, iron and manganese.
It’s been proven to prevent blood sugar spikes because of the low glycemic index of oats. Get your porridge on!
- 50g rolled oats
- 150ml of unsweetened fortified plant based milk (more to serve if needed)
- ½ tsp of cinnamon (optional)
- Small pinch salt
For the toppings
- 2 tbsp peanut butter or almond butter
- 1 tsp mixed seeds
- 1 tbsp ground flax
- 1 tsp mixed dry fruit
- 1 banana
Peel and cut the banana up into slices
Put the oats in a saucepan with the milk, cinnamon and salt | Put the saucepan on the stove over a low heat and stir with a wooden spoon for 4-6 minutes until the porridge is smooth and creamy (add more milk if needs be)
Transfer the porridge to a bowl, sprinkle over the toppings and eat immediately
