This healthy vegan recipe is packed full of protein, fibre and antioxidants.

It's a delicious plant-based dish with a beautiful combination of flavours, perfect for vegan meal prep or for anyone that's looking to live a healthy and balanced lifestyle.

We had Naturally Stefanie in to cook this wonderful recipe, and we can't wait for all of you to try it at home.

Before you start

High sided frying pan with lid

Ingredients

  • 2 tbsp olive oil
  • 1 280g block firm tofu
  • 1 small bag sprouts
  • 15g basil
  • 1 lemon (juice and zest)
  • 2 cloves garlic
  • 2 bags Italian grains
  • 50g vegan pesto
  • 6 cavolo nero leaves
  • 2 tbsp nooch
  • 100g peas

To serve (optional)

  • Hummus
  • Smashed avocado
  • Sprouted lentils
  • Seeds
  • Nooch
  • Olive oil

Method

  1. 1.

    Prepare the ingredients | Drain and crumble to tofu into pea sized pieces | Strip the cavolo nero leaves from the spines, finely shred the leaves | Trim the ends off the sprouts and cut into thick slices | Zest the lemon then cut in half | Peel and grate the garlic | Pick the basil leaves, finely slice the stems, slice the leaves

    Time to cook | Warm the olive oil in a medium hot pan | Add the crumbled tofu into the pan and stir for 1- 2 minutes | Add the sprouts and stir for 2 minutes | Add the garlic, lemon and basil stems and stir for 1 minute | Add the grains to the bowl, stir to combine, put the lid on and cook for 2 minutes | Add the pesto and nooch to pan and fold to combine | Add the cavolo nero and peas to the pan and stir until cooked through | Squeeze the lemon juice into the pan, catching any pips in your free hand, sprinkle over the basil and stir | Taste and season to perfection with a little salt and good pinch of pepper

    Time to serve | Spoon the Protein Packed Pea Sprout Greens into serving bowls | Dollop in a little hummus and smashed avocado | Drizzle over a little olive oil, season with nooch, sprinkle over the sprouted lentils and mixed seeds and serve immediately
