If you're taking part in #Veganuary, these pancakes will serve you well. Our pal Naturally Stefanie kindly shared her awesome protein pancake recipe with us and they are the business. Stephanie's an absolute gem and we LOVE her new book. Do yourself a favour and check it out.

For the pancakes

  • 1 cup oats
  • 1/4 cup dairy-free vanilla protein powder
  • 1 tsp baking powder
  • 1/2 banana
  • 1 cup almond milk

Topping suggestions

  • Peanut Butter
  • Banana
  • Walnuts
  • Maple Syrup
  • Egg-Free Custard
  • Blueberries
  • Chia Seeds
  • Maple Syrup
  • Our homemade Chestnutella
  • Strawberries
  • Hazelnuts
  • Coconut Yoghurt
  • Raspberries
  • Pistachios

Equipment

  • Blender
  • Frying pan

Method

  1. 1.

    Mix all the pancake ingredients in a blender until smooth.

  2. 2.

    Pour about 2 tbsp into a frying pan.

  3. 3.

    Cook for a minute or two, flip, cook for a further minute, then serve with your choice of toppings.
