The BOSH! roast ratatouille super easy pasta recipe is packed full of full of flavour and will leaving full all afternoon!

We also think this such a quick and simple dish and it also makes a great kids vegan recipe idea too!

Roasting vegetables

  • 1 Eggplant (cubed)
  • 1 Zucchini (cubed)
  • 1 Cup Cherry Tomatoes (halved)
  • 4 Tbsp Olive Oil
  • 1 tsp salt
  • 1 tsp pepper

Sauce

  • 2/3 cup sun dried tomatoes
  • 2 tbsp tomato puree
  • 1 clove garlic
  • 1 can chopped tomatoes
  • 1/2 tsp sugar
  • 2 tbsp olive oil
  • Cooked Penne pasta (enough for 4 people)

To garnish

  • Basil leaves

Method

  1. 1.

    Put all the roasting ingredients in a baking tray & roast them for 20 minutes at 180℃ (356℉).

  2. 2.

    Put all the Sauce ingredients in a liquidiser, whizz them up and then fry the sauce until it’s lightly bubbling.

  3. 3.

    Pour the roasted vegetables into the frying pan with the sauce.

  4. 4.

    Pour in the pasta and stir it through the sauce with 1/2 cup of pasta water to thin the sauce.

    Serve with a garnish of basil leaves. BOSH!
