Let's taco-bout how Tasty Curls came to the BOSH! studio to cook and she did not disappoint! This plant-based take on a Spicy Chipotle Tacos was absolutely delicious, and we can't wait for you to try this yourselves. Who can resist a great taco?

Before you start

Powerful blender | Large bowl | Line a baking tray with parchment paper

Serves 2 with sides

Ingredients

For the tacos

  • 2x packs of oyster mushrooms (about 300g)
  • 2 tbsp maple syrup
  • 2 tbsp chipotle paste
  • 2 heaped tsp smoked paprika
  • 2 tsp liquid smoke
  • 2 tsp apple cider vinegar
  • 2 tbsp tamari
  • Tortilla

For the pineapple salsa

  • 2x packs of oyster mushrooms (about 300g)
  • 2 tbsp maple syrup
  • 2 tbsp chipotle paste
  • 2 heaped tsp smoked paprika
  • 2 tsp liquid smoke
  • 2 tsp apple cider vinegar
  • 2 tbsp tamari
  • Tortilla

For the avocado sauce

  • ½ avocado
  • ½ bunch coriander
  • ½ bunch of basil
  • 1 clove of garlic
  • Salt to taste
  • Water to taste
  • 1 lime

Method

  1. 1.

    Make the filling | Add the oyster mushrooms to a large bowl and roughly shred them apart using your hands | Add the maple, chipotle paste, paprika, liquid smoke, apple cider vinegar, tamari and a pinch of salt | Mix well until all of the mushrooms are coated in the mixture | Cover with a cloth and leave to marinate whilst you prepare the other ingredients

    Make the salsa | Dice the pineapple into small chunks and add to a bowl | Thinly slice the onions, chop the tomatoes, chilli and finely chop the coriander | Add to the bowl and add a pinch of sea salt and a good squeeze of lime juice | Mix well and leave to one side until needed

  3. 3.

    For the avocado sauce | Add all of the avocado sauce ingredients into a blender and blend until smooth

  4. 4.

    Cook the mushrooms | Place a pan over a medium heat and add a drizzle of olive oil | Once warm, sautée the oyster mushrooms until soft and tender

  5. 5.

    Cook the corn tortillas | Cook the tortillas according to the instructions on the pack and lay on a serving plate

  6. 6.

    Build the tacos | Assemble the tacos by spreading some of the avocado sauce onto each tortilla, followed by the oyster mushrooms then the pineapple salsa | Enjoy immediately
