The lovely Grace from SpiceBox came into our studio last week to help us make some super tasty asian-inspired food. These Tandoori Cauli Steaks with Cilantro Pesto were dreamy, if you like curry, you should definitely make these at home!

This is a great choice for a vegan dinner idea, if you're looking for a veggie curry recipe, maybe this may tickle your fancy instead OR you could make it as a big plant based indian spread!

  • 1 Cauliflower
  • 2 tbsp smoked paprika
  • 2 tbsp cumin
  • 2 tbsp garlic powder
  • 1.5 tbsp turmeric
  • 1.5 tbsp salt
  • 1/4 cup vegetable oil

Cilantro Sauce

  • 1/3 cup vegetable oil
  • 2 lemons (zest & juice)
  • 2 tbsp vinegar
  • 4 cloves garlic
  • 1 green chilli
  • small bunch parsley

To serve

  • Cauliflower Rice (method below)
  • Pickled Red onion
  • Salad

Method

  1. 1.

    Cut the cauliflower in to two steaks (use the stalk as a base & save all the excess cauliflower to make cauliflower rice!)

  2. 2.

    Put the spices & vegetable oil into a bowl & mix them all round to make a marinade.

  3. 3.

    Cover the steaks in the marinade & bake them for 40 minutes at a very high temperature (220℃ (420℉)

  4. 4.

    Put the cilantro pesto ingredients in a food processor & whizz them up into a sauce.

  5. 5.

    Make the cauliflower rice (blend the rice up into rice-sized pieces & then fry it with some finely chopped onions, salt & a tbsp of turmeric.

  6. 6.

    Take the steaks out of the oven & serve with the cauliflower rice, pickled red onion & salad.

  7. 7.

    Pour over the cilantro pesto & tuck in! BOSH!
