Olive Tapenade
- 1.5 cups pitted black olives
- 2 cloves garlic
- 1/3 cup capers
- juice of 1 lemon
- 4 tbsp olive oil
- Pinch of salt
- Pinch of pepper
- Small bunch parsley
Equipment
- Pastry Brush
- Baking tray
- Food processor
Method
-
1.
Take your loaf and carefully cut three equal sized "wells" out of it.
-
2.
Cut the pieces of bread you remove into fingers shapes.
-
3.
Brush the fingers (and the "wells") with garlic oil (you can make your own or use store-bought, both will be fine).
-
4.
Bake the bread (and the fingers) on a baking tray for 20 minutes at 180℃ (352℃)
-
5.
Prick your eggplants all over and bake them on a high heat for an hour.
-
6.
Remove them from the oven, let them cool down, cut them open and scoop out the flesh.
-
7.
Put the flesh in the food processor along with the rest of the baba ghanoush ingredients and whizz them up into a paste.
-
8.
Spoon the paste into one of the wells in the bread loaf.
-
9.
Put the hummus ingredients into a food processor, whizz them up and put the hummus in one of the wells in the bread, too.
-
10.
Put the tapenade ingredients in a food processor and whizz them up into a paste, put the paste into the last remaining well in your bread loaf.
-
11.
Serve immediately. Eat in its entirety.
