Vegan 'Chicken & Bacon' Sandwich

Before we were vegan, one of Ian’s favourite sandwiches was a good chicken and bacon sandwich. So we decided to veganise it! We used the super versatile king oyster mushrooms to make both the chicken and the bacon, and it tastes and feels legit! It’s a fantastic sandwich.

Oven preheated to 180*C | Baking sheet lined with parchment paper | Frying pan | Toaster
Ingredients
For the KO 'Chicken'
- 8 king oyster mushrooms
- 1 tbsp olive oil
- 2 tbsp vegan-friendly chicken seasoning
- Salt and pepper to taste
For the KO 'Bacon'
- 2 tbsp olive oil
- 1½ tbsp maple syrup
- 1 tbsp soy sauce
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp liquid smoke
- 4 fat king oyster mushrooms
- 4 ciabatta rolls
- 1 lemon
- 1 avocado
- 1 ice gem lettuce
- 2 tomatoes
- 100g sweetcorn
- 4 tbsp vegan mayo
- Salt and pepper to taste
Method

Prepare the “chicken” | Cut the caps off the king oyster mushrooms and slice them thinly | Roughly tear the mushroom stems into rough 1cm thick strips | Put the mushrooms in a bowl, drizzle with the olive oil and sprinkle over the chicken seasoning | Toss to combine, making sure the mushrooms are evenly coated with the flavouring | Add the mushrooms to the roasting tin and make sure they are evenly spaced out | Put the roasting tin in the oven and bake the mushrooms for 25–30 minutes

Prepare the bacon | Slice the king oyster mushrooms lengthways into ¼ cm thick slices | Add all the marinade ingredients to a bowl and stir to combine | Put the mushroom slices in the bowl, toss to coat and leave to marinade

Prepare the sandwich ingredients | Halve the ciabatta rolls and lightly toast in the toaster | Cut the lemon into wedges | Halve, destone, peel and slice the avocado | Quarter, core and shred the lettuce | Slice the tomatoes

Cook the bacon | Warm a splash of oil in a frying pan over a medium high heat, add the marinated king oyster mushrooms and fry for 5 minutes on both sides until cooked through and slightly crispy around the edges

Build the sandwiches | Spread the ciabatta rolls with mayo, and layer up all the fillings as you prefer (squeeze the lemon over avocado slices), season with salt and pepper and serve immediately with a bag of crisps
