Vegan Croque Monsieur


A plant-based take on the classic French sandwich, loaded with vegan ham, cheese, and a creamy bechamel sauce.
Before you start
Frying pan | Preheated grill
Ingredients
For the bechamel sauce:
- 1/4 cup of vegan butter
- 1/4 cup flour
- 350ml soy milk
- salt and pepper
- 1 tbsp nutritional yeast
- 1/2 tsp wholegrain mustard
- Pinch of ground nutmeg
For the sandwich:
- Thick cut white bread
- 8 slices of vegan ham
- Vegan cheese

Prepare the bechamel sauce | In a pan, melt the butter and once melted add the flour and stir until it forms into a paste | Slowly add the soy milk until it thickens | Add the nutritional yeast, mustard, nutmeg and salt and pepper and combine | Set aside
Make the sandwich | Get your bread and butter it on both sides | Put the buttered side down in a pan until golden brown and flip | Once flipped, you can start to build your sandwich | Add the bechamel to one side of the bread and top with vegan ham and grated cheese | Close the sandwich and put the remaining bechamel sauce on the top, sprinkle on a bit more cheese and place until the grill until bubbling and the cheese is golden | Serve and enjoy
