Vegan Egg and Cress Sandwich
This egg and cress sandwich with leave you scratching your head and rubbing your eyes - yes it's really vegan and yes, it really does taste like egg!
You've really got to get yourself some black salt or Kala Namak as this is a game changer when making vegan egg dishes. Perfect for picnics, you'll be making this all summer long!
Before you start
- Firm silken tofu
- 2 tablespoons vegan salad cream
- 2 tablespoons vegan mayonnaise
- 1 tbsp black salt aka kala namlak
- Salt and pepper to taste
- 1 tsp turmeric
- Vegan butter
- White bread
Make the egg | Mix all the the tofu in a bowl with the salad cream, mayo, black salt, turmeric and salt and pepper, making sure not to overstir the tofu
Make the sandwich | Butter the bread and layer with the vegan egg | Cut into triangles and serve
