Vegan Molletes

Whoever said good things come in small packages had definitely just enjoyed one of our Vegan Molletes! This recipe is super simple, super tasty and has a great kick to it.

Before you start
Pre-heat the oven to 200ºC
Ingredients
- 1 can refried beans
- 1-2 cups grated vegan cheese
- 3-4 bread rolls
For the Pico de Gallo
- 2 tomatoes
- 1/2 onion
- 1/2 jalapeno
- juice of 1 lime
- 15-20 sprigs coriander
- 1/2 teaspoon salt

Make the Pico de Gallo | Chop up the tomatoes, half an onion, half the jalapeño (you can add the other half if you want more kick) and the coriander | Add them into a bowl with the juice of 1 lime and season to taste

Make the sandwich | Slice the bread in half and toast in the oven for a couple of minutes | Once out, spread on a layer of the refried beans and the grated cheese | Whack in the oven until the cheese melts | Spoon on the Pico de Gallo and serve
