These Vegan Pesto Eggs are a plant-based version of the tastiest viral breakfast trend to come from TikTok, and they're everything.

Perfectly fried vegan eggs, a couple of tablespoons of vegan pesto, and the flavour sensation is real!

These beauties were created by Prunch, and we've been obsessed ever since.

Before you start

Stick blender | Frying pan with lid

Ingredients

For the egg whites

  • 2 tbsp vegan pesto
  • 250g medium-firm tofu
  • 80ml plant-based milk
  • 1 tbsp gram flour
  • 1 tbsp nooch
  • 1/2 tbsp cornflour

For the egg yolks

  • 4 yellow cherry tomatoes

To finish

  • 1 tsp black salt (kala namak)
  • 1 tsp garlic powder
  • Salt to taste

To serve

  • 2 slices of your favourite bread
  • Handful of rocket
  • Chilli oil or sriracha (optional)

Method

  1. 1.

    Make the egg base | Add the tofu, plant-based milk, gram flour, nooch, black salt, garlic powder and salt to a tall glass and blend using a stick blender

  2. 2.

    Fry your eggs | In a pan on medium heat, add 2 tbsp of vegan pesto and pour the tofu mix over the pesto | Add half a yellow cherry tomato over the top of the tofu mix and put a lid over the pan | Turn the heat down to low and let cook for 6-8 minutes

  3. 3.

    FInish it off | Sprinkle freshly cracked pepper, a pinch of sea salt and a pinch of black salt over the eggs | Toast some bread, top with some rocket leaves and add the eggs over the top | Finish with some chilli oil or sriracha
