Not just any banana pancakes, VEGAN friendly banana pancakes. Now, take the idea of dairy free pancakes, and now add the flavours of CUSTARD....oh HELLO! Thank's to good old Oatley. They sent us a box of goodies to have a play around with and we're pretty darn chuffed with what we came up with. The best vegan breakfast idea ever?

For the batter

<item-todo-done>1 tbsp baking soda<item-todo-done><item-todo-done>2 tbsp coconut oil<item-todo-done><item-todo-done>240g plain flour<item-todo-done><item-todo-done> Pinch of salt<item-todo-done><item-todo-done>30g powdered sugar<item-todo-done><item-todo-done>2 bananas<item-todo-done><item-todo-done>1 carton of oat custard<item-todo-done>


To serve

Before you start

Frying pan | Blender

Make batter

  • Put all the ingredients in a blender and whizz until you have a well mixed, thickish batter
  • Scoop out a large tablespoon of the batter and pour it into a hot pan, which has about a teaspoon of heated coconut oil on it
  • Allow to cook for a minute or two until it begins to bubble, then carefully flip onto the other side and cook for a further few minutes
  • Repeat with the rest of the mix until you have a pleasing stack of pancakes

Time to serve

  • Pour over some maple syrup and fruit to serve to happy guests
