Banana Custard Pancakes
"Wakin' up too early

Make you banana pancakes
Pretend like its the weekend now..."
Yeah, Mr Jack Johnson had the right idea. Weekends are made for banana pancakes. Not just any banana pancakes, VEGAN friendly banana pancakes.
Now, take the idea of dairy free pancakes, and now add the flavours of CUSTARD....oh HELLO! Thank's to good old Oatley. They sent us a box of goodies to have a play around with and we're pretty darn chuffed with what we came up with.
The best vegan breakfast idea ever?
- 2 cups plain flour
- 1 tbsp baking soda
- 1/4 cup powdered sugar
- 2 tbsp coconut oil
- Pinch salt
- 2 bananas
- 1 carton Oatly custard
- Maple Syrup
- Frying pan
Put all the ingredients in a blender and whizz until you have a well mixed, thickish batter.
Scoop out a large tablespoon of the batter and pour it into a hot pan, which has about a teaspoon of heated coconut oil on it.
Allow to cook for a minute or two until it begins to bubble, then carefully flip onto the other side and cook for a further few minutes.
Repeat with the rest of the mix until you have a pleasing stack of pancakes.
Pour over some maple syrup and fruit to serve to happy guests.
