Yeah, Mr Jack Johnson had the right idea. Weekends are made for banana pancakes. Especially these custard-y ones from our lovely mates at Oatley. They sent us a box of goodies to have a play around with and we're pretty darn chuffed with what we came up with. Bring on breakfast.

  • 2 cups plain flour
  • 1 tbsp baking soda
  • 1/4 cup powdered sugar
  • 2 tbsp coconut oil
  • Pinch salt
  • 2 bananas
  • 1 carton Oatly custard

To serve

  • Maple Syrup
  • Berries

Equipment

  • Blender
  • Frying pan

Method

  1. 1.

    Put all the ingredients in a blender and whizz until you have a well mixed, thickish batter.

  2. 2.

    Scoop out a large tablespoon of the batter and pour it into a hot pan, which has about a teaspoon of heated coconut oil on it.

  3. 3.

    Allow to cook for a minute or two until it begins to bubble, then carefully flip onto the other side and cook for a further few minutes.

  4. 4.

    Repeat with the rest of the mix until you have a pleasing stack of pancakes.

  5. 5.

    Pour over some maple syrup and fruit to serve to happy guests.
