This is our protein packed, black bean dip of dreams! If you are looking for a snack, party food ideas or hors d'oeuvre recipes... wow, wow, wow....are your guests in for a treat with this one. In fact, it's so tasty we think you might like to keep it all to yourself! It goes really well with breadsticks, crackers or crudités. This is a super simple and easy dip! If you want more (which you will do) you can double the batch.

For the dip

<item-todo-done>2 tbsp sun-dried tomato oil - from the jar<item-todo-done><item-todo-done>2 tbsp water<item-todo-done><item-todo-done>1 x 400g can of black beans<item-todo-done><item-todo-done>4 sun-dried tomatoes<item-todo-done><item-todo-done>1 Juice of 1 lemon<item-todo-done><item-todo-done>½ tsp chilli flakes<item-todo-done><item-todo-done> Salt & pepper to taste<item-todo-done><item-todo-done>10g parsley leaves<item-todo-done>


To serve

Before you start

Food processor

Make the dip

  • Drain and rinse the black beans
  • Juice the lemon
  • Place the black beans, sun dried tomatoes, lemon juice, oil, water and chilli flakes in the blender and blitz into a textured paste

Taste and enjoy

  • Taste, season to perfection and portion the dip into 5 small sealable containers
  • Eat one portion every day as a snack with 2 of the whole wheat crackers or crudités
