Vegan BBQ Pulled 'Pork' 4 Ways

Vegan pulled pork 4 ways!

Ingredients
Homemade BBQ Sauce
- 2 cups ketchup
- ¼ cup apple cider vinegar
- ¼ cup brown sugar
- 2 tbsp maple syrup
- 1 tbsp soy sauce
- 1 tbsp lemon juice
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
Pulled BBQ Aubergine
- 2 aubergines, baked for 1 hour
- ½ white onion, sliced
- 1 clove garlic
- ½ cup homemade BBQ sauce
- White buns
Pulled Fiery Carrot
- 5 carrots
- 2 shallots
- 1 tsp salt
- 1 tsp pepper
- 1 tsp chilli flakes
- 1 tbsp sesame oil
- 1 clove garlic
- 1 inch ginger
- ½ cup homemade BBQ sauce
- White buns
Pulled Hoisin Mushroom
- 500g portobello mushrooms
- ½ tbsp olive oil
- ½ tbsp sesame oil
- 3 spring onions, chopped
- 1 tbsp soy sauce
- ½ cup homemade BBQ sauce
- white bun
Pulled Cajun Sweet Potato
- 1 or 2 large sweet potatoes
- 1 tbsp chilli oil
- ½ red onion, sliced
- 1 clove garlic
- 1 tbsp cajun spice mix
- ½ cup homemade BBQ sauce
For the slaw
- Red cabbage, shredded
- Carrot, shredded
- Spring onions, sliced
- 1 tbsp grated ginger
- 1/2 cup vegan mayo
- 1 tsp soy sauce
- 1 tsp rice wine vinegar
- Sesame seeds
Method

For the pulled aubergine
Pierce your aubergines and roast them in the oven at 180 degrees celsius for 1 hour 15 minutes.
Take the aubergines out the oven and leave to cool down. Slice open the aubergine and scoop out the insides into a separate bowl and set aside for later.
In a pan, add olive oil, onion and garlic. Add the aubergine and let it cook for about 5 minutes followed by the BBQ sauce.
Layer up your bun with fillings of your choice and add the BBQ aubergine. Enjoy!

For the pulled carrot
Peel and chop your carrots into large chunks then add to the food processor along with two shallots that have been peeled.
Pulse your carrot and onion mix until they're shredded - make sure they're not mushy!
Add to a baking tray along with salt, pepper, chilli flakes and sesame oil. Make sure it's all mixed in together before popping in the oven at 180 degrees celsius for 20-30 minutes.
In a pan add a splash of sesame oil along with the garlic and ginger. Sautee these for a couple minutes before adding the carrots. Let this cook for a couple minutes and then add the sriracha and BBQ sauce.
Layer up your bun with fillings of your choice and add the BBQ carrots. Enjoy!

For the pulled mushrooms
Over a baking tray, pull apart your mushrooms with a fork. Add the salt, pepper and olive oil. Roast in the oven at 180 degrees celsius for 20 minutes.
Add sesame oil and olive oil to the pan along with the spring onions. Add the mushrooms, soy sauce and BBQ sauce and make sure everything is mixed well.
Layer up your bun with fillings of your choice and add the BBQ mushrooms. Enjoy!

For the pulled sweet potato
Peel your sweet potato and grate it.
Add the oil to the pan along with the sliced red onion, garlic and sweet potato. Cook these for about 5 minutes.
Add the cajun spice mix and BBQ sauce and stir until combined. Cook for a further 5 minutes.
Layer up your bun with fillings of your choice and add the BBQ sweet potato. Enjoy!
