"Foie gras is about as far from vegan as food comes. The controversial pâté – which is made from the liver of ducks or geese which have been deliberately force-fed – has long been criticised as cruel by animal rights groups like PETA and the Humane Society of the United States. Which is why Michelin-star chef Alexis Gauthier has come up with a far friendlier alternative. The Frenchman – in collaboration with Bosh!, a pair of chefs who cook solely with plant-based products – have created ‘faux gras’."
